A Refining Cellar in New-York
Context
After the purchase of a building in New York, the owner discovered an underground tunnel network.
These tunnels were historically used as storage space for a brewery, but were neglected for a long time and were falling into ruins.
The owner expressed his idea of converting these tunnels for food production usage. The idea made its way through and the owner finally decided to install an urban ripening cellar.
Clauger thus equipped the first cheese ripening cellar ‘’made in Clauger’’ located in the heart of New-York
The first tunnel is filled with hard cheese.
